SMOKED SALMON & TOMATO SALAD

A classic taste of Tuscany - perfect for summer post siesta!

  • Perino® Red Tomatoes

Ingredients

  • 200g Perino Tomatoes
  • Smoked salmon
  • Baby potatoes
  • Avocado
  • Rocket/arugula
  • Red Onion
  • Dill
  • Mayonnaise
  • Lemon juice
  • Sea salt and freshly ground black pepper

Method

  1. Boil the potatoes in salted water until tender. Drain well and allow to cool slightly.
  2. Cut the potatoes into quarters.
  3. In a small bowl, combine the mayonnaise, lemon juice and finely chopped fresh dill. Season to taste and set aside to allow the flavours to develop.
  4. Cut your tomatoes in half.
  5. Cut the smoked salmon into strips.
  6. Cut your onion in half, and finely slice into half-moons.
  7. Slice the avocado in half, and carefully remove the stone. Peel the skin away from the avocado and cut into small cubes.
  8. When you’re ready to serve, assemble the salad and toss with the dressing. Season to taste.
